Tips and Variations
- For a homemade pudim with a special flavor, add a teaspoon of vanilla extract to the batter.
- If you prefer, use plant-based milk for a lactose-free version.
- Try adding lemon or orange zest to the syrup for a citrus touch.
- Homemade pudim can be stored in the refrigerator for up to 3 days.
CHEF’s Tips
The secret to a good homemade pudim lies in patience during caramel preparation and oven time. The caramel should be made over low heat to prevent burning and bitterness. When adding water, do so carefully, as the mixture bubbles a lot. The water bath is essential for the pudim to cook evenly, resulting in an incredibly creamy texture. Don’t forget to check the oven temperature and cooking time, as they can vary from oven to oven. And, most importantly, respect the chilling time: it ensures the perfect consistency to savor every bite of this Brazilian culinary classic. Serve the aunt’s pudim chilled and enjoy this dessert that melts in your mouth and warms the heart.
